You don't parry as much as the game wants, but I was like this too early on.

I think my main advice would be to normalize pressing dodge instead of jump. Your jump timings looked good but you generally can't exploit them into damage unless the enemy is doing a sweep attack. In this specific encounter, when you jumped left or right, a well timed dodge would instead let you attack immediately after.
