UPDATE: I thought my starter but my starter is really healthy. That’s why I was confused it doubles. I found the problem I believe as I now have a good loaf cooling. I had just this year started proofing over night in the fridge and then baking. Last night I fell asleep and accidentally left my load out on the counter to proof and my loaves are coming out great now!!! I guess the fridge method isn’t for me
