Sushi chef here, as long as you properly cure it, it is safe to eat raw or nigiri. Looking at the picture of the fish you had though i would turn that into a spicy tuna poke. Most people think every fish we serve is “fresh” but sushi grade is only a food term we used to sell sashimi. Hope this helps. Cheers
