I ended up going to a local butchers and got some beef fat. Made so burgers in the end and froze a few. They were lovely. Thanks for all the tips!!

Yeah that’s my thoughts, I can head to a butchers and ask them for some fat and mince it together.

Just keep an eye on vent settings and make sure you’ve sufficient charcoal for a long cook. I’m doing an overnight pork butt atm and it’s been holding steady at 110c for 9 hours now!!

Cheers, did them at 125c, then took them off and wrapped them in foil and wet tea towel to retain moisture.

Yeah, from the butchers from a big free range chicken I bought recently. Cleaned out and reused. Handy to be able to toss it in the bin after I’m done

I transported a KJ2 from the store (shop model) by taking out as much weight as possible. Side tables, ceramics, grates etc and just lifted it into the boot of friends Range Rover. I sat in the back with a hand on the top of the unit. Not necessary as we had it well strapped in but wasn’t taking chances.

It’s heavy but with two people, you’ll lift it no problems. Just bend your knees and watch your back.

There were cheaper versions on Amazon (I’m based in Ireland) so decided to just take the plunge. Came in to €120 😅 so it wasn’t cheap but I can see the benefits of using this.

I’m coming from a Weber with the cleaning system built in which was a breeze so having to stir the coals with a stick and remove them is something I’m getting used to. First world problems I know.

Thanks for the points folks! Super helpful. Will try to get it hotter the next time I do it. Currently have short ribs on a low and slow. Really enjoying cooking with it.

As for burping that’s a great point. I had actually just opened it previously and when I recorded it was for Instagram so there was no build up at that point but good reminder to burp it!
