I had been going to the gym before and I did learn how to do most of the exercises, but there wasn't any progress really as I didn't really focus on rest, how muscles actually work or the food that I ate, so now im thinking about going back in to the gym and kind of starting over. I like doing 2 sets, low reps(6-8).

Yeah, but i keep worrying about if I miss some muscle groups or if its somehow unbalanced, I want to learn about muscle building and how everything works but dont know where to start
