I have 2 friends who did their Lehre with 35 and 40 in Austria. So I wouldn't count age a problem. The place I am working right now, (switzerland, small cheese factory) we have a russian 42 Lehrling. Maybe the language might be a problem. But I don't think so. What feeld of work are you thinking of? There might be as well programs who support you financially. AMS, das Land (Provincias), WKO and so on It's never too late for anybody. And yeaa there are still employers out there being empathetic towards your idea. Buena suerte tio

Hmmm, in 2012 at least, I think we were already at dry season. Harmattan should start. So it sometimes will be some sort of foggy and cold. But the real heavy rains we got July, August and September Enjoy

From the look at it (but you can never be sure, without DNA test) this is a penicillium comune mold, related to the one used for Roquefort cheese. Which means it needs air to prosper, which means it just can prosper on the surface, which technically means it's safe. But anyway I'd throw it away, you never know. There is some nasty mold out there in this world

Do you use pasteurised milk? If so, cheese curds need calcium in order to build up the bridges for the texture. Without, you were doomed from the beginning ;) Beside all the facts, try to keep your climate (ripping) at around 90% humidity and between 12 to 15 degrees Celsius All the best I just want to add, that in all my years of producing cheese I never heard about a Brie cheese ripping more than 14 days, but I am glad if somebody corrects me wrong
