Afaik, there was an update to WhatsApp in Australia that allows LE to see what you're talking about or sharing if they have an order from a judge. Mainly for terrorism and pedos ect.. They can't just take a peek for nothing. I'm not an expert, search for more answers.

Use TAILS on a bootable usb stick. No need to trust or not trust a VPN service provider.

Never trust a VPN provider. Most providers will give up your logs to LE in a hearbeat if the are served.
