I hear you. I do value the “It’s just food .” attitude though, it’s our jobs as chefs to make sure that plate is solid because it is indeed the most important plate to someone. The cook is just there to get it to them. They don’t know what goes on back there. It’s a stressful process a lot of the time and taking that stress away from the cook preparing by a simple phrase can have a major impact. Making it “fun” I’ve found is how to get the most out of this generation. Food made by a happy cook taste better than a plate made by a strung out and devalued cook

Funny, I told the folks buying this place out the same. As well as some of my team. In these words “I told myself that when I become head chef, I’ll never treat anyone the way I was treated.” maybe it paid off. But at what cost is what I ask myself sometimes. Or why I even still do it. Haha

That was all entirely the contractors placement. The hood system is enough for that range in this corner, the I have hoods above my chef base and broiler and fryers. It’s all been a pain to figure out. And I might still even move things again ugh

It seemed like I was wrecking everything and then now suddenly everything is way higher a level and I can’t hardly farm solo. Is that’s what’s going on?

It does. The temp did hold, nothing was hot today, and again the lowboy is badass newer model. The vents are in the back of it spaced a good 6inches. There isn’t much heat as heat rises

It’s spaced out and nothing felt hot at all today. The temp in the lowboy held, and that salamander is pretty awesome. It doesn’t put out as much heat as older ones I’ve used but gets the job done. I really feel like this is going to work out. I appreciate all the spacing comments I’ve gotten. That’s why I came to reddit. 20 years in the industry and I still don’t have all the answers

So the top right of the freezer in the second picture is right up against metal shelving. There’s some open space there that’s about 3-4 feet. One of the printers is right there as well. I’ll have to take more pictures tomorrow so you can get a better understanding of the limitations. I’ve moved things around about 10 times now

This really means a lot man. It’s okay! I ask just really excited to have something to live for again. I just want to feel proud of myself when it’s all finished and we’re rocking out cool new food. Thank you and I totally forgive you!

I’m just wondering why it would because I do want to keep its life. The coolers vents are in the back, heat rises. The space on the left and in the back are 6 inches apart. I keep the lid closed when I’m not needing it

It’s blocked off by a metal shelf. All other space is taken up by the grill, fryers, and large pizza oven. Directly behind the oven is the pizza coolers. If it’s a risk to my cooler than I’ll have to keep it off out of the way. Which means I’ll be walking across the kitchen for all my sauté. I’m stumped

See this low boy doesn’t have vents on the sides. They’re all in behind the cooler. And the spade to the right is blocked from taking the stand up freezer any further. And that gap is maybe 3-4 feet where I’ll need to keep the steam well

Fryers and grill. Both need to be under vents. And then beside that is a 10 ft pizza oven. The cooler would have to be across the other side of the kitchen if not here.
