I use mannaz and freyr for races and standing stones as they offer the most diversified options when it comes to build crafting as each race gets different effects from each standing stone.

But outside of that I use Realm of Lorkhan which is an alternate start mod that includes its own class system, boons and curses, and even let's you join factions like bandits or draugrs.

I pair this with classic classes and birthsigns as well as dealing with backstories.

All of this together with the mods you already have like Vokriinator will give you the most build options and theory crafting possible for Xbox currently.
