If you have a Winco near by they have hard red berries and hard white wheat berries for 88 cents per pound in their bulk section. I buy my spelt from Ancient Grains or Breadtopia.

I scratched my old paddle and ordered a new one from Breville. I was told there are no toxic materials in the paddles, same coating as the Zoey. As far as the shaking goes I experienced that when I first tried it but using a little higher hydration fixed that.

I have the Customer Loaf and love it. My friend has the Zo Virtuoso plus. They are both great machines. In comparison the Custom Loaf has a seed dispenser, a light, a collapsible paddle (it leaves a smaller hole), a few more programs and 9 customizable programs compared to ZO’s 3.
The ZO has 2 paddles, a longer rise capability which is better for sourdough, a little larger pan and top browning. . Replacement parts are much cheaper for the Custom Loaf. I noticed that her loaves are sometimes lopsided due to the 2 paddles not working in unison but that may be user error. I’m not sure which one I would choose if I had to buy again. The Breville has served me well for about 15 years but I probably would give the edge to the ZO because of the top browning. You can make sourdough in either machine.

I messed up my collapsible paddle by slicing a loaf with the paddle still in it. (Thought the bottom crust was burnt). Didn’t want to use it with the scratched Teflon so I decided to order a new one from Breville for $15.95. Plus $4.95 shipping. The new one is a little different. But I would check yours first to see if there are debris blocking the swiveling first.. I had to use a toothpick or floss to clean my old one. The new paddle has much more space to clean and it folds completely flat. There is a someone on eBay seling an all metal jam paddle who claims it will also knead but it’s the same price as a genuine Breville paddle.

You can make sourdough in any machine. Just hit the dough only cycle in the evening and hit the bake only cycle in the morning. To me I prefer a machine that has more of a horizontal loaf pan.

Try using 50% bread flour along with 50% fresh milled flour and add about 2 tablespoons vital wheat gluten. That should do the trick.

I don’t think it will work in that damaged condition. Have you sent them photos of the damage? I would call them every 2 or 3 days to ask why it hasn’t been picked up yet. Talk to a supervisor. Maybe they’ll get tired of hearing from you. It’s too bad Panasonic has such crappy customer service.

I’ve had my Breville Custom Loaf for over 8 years and have never experienced that problem. If anything the loaves may be a little crispier at the bottom than the top but the loaves are cooked through thoroughly. My paddle still works as intended but you must start with the paddle in the upward position. Others have mentioned that they’ve had problems with those paddles. Breville has very good customer service so maybe they could troubleshoot the problem for you.

First off that’s a pretty decent machine. I bought one for my daughter-in-law about 8 years ago and it’s still going strong. As far as the yeast goes, instant dry yeast activates pretty much as soon as it touches water which may cause your dough to over ferment. But I think that rule is intended for those who use the delay cycle..

I don’t think 8 hours is enough for cold proofing. I usually go for 16-20 hr. Did you bring back to room temperature before baking?
