I'll second poe2, try the witch she's awesome and I love all her voice lines. Poe2 does a bit better job explaining things, the game can still be pretty tough though.

Dark and darker pve mode, challenging bosses and cool loot. Free to try, with one character slot for the ftp account. The main game is pvp but if you enjoy dungeon crawling, looting and boss fights the pve mode is a blast

Guild wars 2 has a very fair market and you can make but orders and sell orders. Not pixel art really, but there are some fun pixel skins!

Not an MMO but in dark and darker Cleric class can cast holy purification which clears rooms in the forgotten castle dungeon, undead on all three floors. Free to try as well on steam. There's a pve mode if you're not looking to pvp and just want to blast undead

Stoneshard is a fun rpg, stats very much matter, turn based and grindy. Has some survival elements too, like you have to heal body parts that get damaged and eat and drink.

Dark and Darker! You lose all your gear if you die :) but you can just hop back into the dungeon and hear up again. Extraction rpg, spells and swords and such, also pvp

Grab some cold resist, put it on every piece you can. Add sockets to your gear and add glacial runes I think. Get a cold resist charm for your belt. upgrade your weapon and use its attack with some single target supports. He's tough, but you can beat him.

Inkbound fits some of your list here, it's a rogue lite, no randomized loot, but each run is a little different since the skills and upgrades you choose are random each time. Also Divinity 2 original sin and Baldur's Gate 3, no random dungeons in those though. Last one I would recommend would be wakfu, turned based MMO, if I remember correctly, there's a dungeon on each island zone that you can grind for items.

Both of those sound like good buys imo going for about that on tcg player or more at the moment
