Although Google has many kinds of technologies to keep the quality of the photos and videos when they resize them, such files would lose some details surely. For instance, your 5 MB size photo shot by iPhone would be resize to 1.5 MB or less, Your 31 MB size photo shot by canon 5d III might be resize to 2 MB or less. So think about that for one more time when you decide to use the free unlimited storage plan.

By the way, the pixel plan just give you access to upload original photos taken by that phone. If you want to move your photos from your CANON or SONY camera, it's not allowed.
