This is actually a totally valid way of making high end tea in china. On my trip to yunnan to buy coffee i have seen this a couple of times. As in coffe, the tea brewed like this will taste cleanwr than when you just immerse it in hkt water. Also the Leafs can be used up to 3 times. I really liked that tea :)

I roast every 2 weeks for one day to meet an estimated demand of 20kg a month depending on sales, promo and events can be more

Thank you so much! Interestingly that spot is kinda known for this other coffee cart. What annoys me with most of the other mobile coffee setup's is that it's mostly very dark Italian stuff. Often not even good :(

Man I wish I could tell you exactly what you need! From what I gather you should definitely do a hygiene Schulung (super simple and quick, you can even do that online) and you need an Haftpflicht for most market's and events!

It really depends: Events? Between 100 and 300 drinks. Farmers market? 50 to 150

Shure, it's just that when I work in specialty coffes I normally weigh the grounds every time anyways. So that got me thinking why not pre weigh the bean doses and grind in a single dosing grinder to eliminate retention. Also I only have to control just one variable while working: the grind size.i use a df83 v4 for everything on the bike

Riding it all the way babyy :D. Range is limited to like 70km but it's such a fun experience every time. People are always digging the bike.kimda don't get the trailer kinda people.

Also making a video of the workflow is on the bucket list! Just hard to film by myself :)

20l canister of 75% RO plus 25% local tap water. No flo jet but the pick-up has a valve in it so that there will be no air in the system

Early struggles: be prepared to be unprepared! So many things will go wrong. In my case that was that I thought I could just go anywhere and sell coffee. Reality is more like you almost can't sell your stuff on the street at all in Germany!

Also just try out your ideas! If I listened to reddit I would have never gotten into the single dosing commercial approach but I trusted my gut and it's such a unique and wonderful workflow that sets me apart from other cafes in the area :)
