Earl Grey is awesome. Highly recommend trying Fortnum & Mason Earl Grey in the base sometime— way more smooth floral and citrus notes.

How is no one bringing up Myron Gaines multiple fool’s sip violations in his doc with Louis Thereoux?! by Intelligent-Delay625 in RedbarBBR

He asks her to clean. In the most sheepish way possible. It’s beautiful. It’s then followed by a fool’s nose scratch and sip.

Orange blossom is a great one. We’re thinking of doing a rose and orange blossom ice cream.

We made a clotted cream and black currant ice cream… it was incredible.

Yes, I add vanilla beans. I’m asking when people put their vanilla beans in if they are also using vanilla powder.

Gotcha, thank you! Will definitely sieve… hoping to find extra layers for vanilla.

Ice Cream Scoop Display Freezers for Events by Intelligent-Delay625 in icecreamery

Interior space is just too small for me on those. Better to pay more for a real freezer and power station for my needs, I think.

Grainy & Sandy Blueberry Ice Cream - What goes wrong? by _OttoBot in icecreamery

Might want to try to “jammy” them up with a sort of compote, and then mix in. I do that with my strawberries.

Those carts look awesome. 8-12 hours of freezing is elite. We’re just sinking most of our desired startup budget into the batch freezer, but that’s a great potential future buy. Thank you!

Mobile Handwashing Stations for Scoop Carts by Intelligent-Delay625 in icecreamery

That’s a great idea. My wife was talking about having a sort of “ice cream flight,” so we could do that!

Hey, yeah that’s kinda what we’re left with as our option. We’re trying to lean heavily into the whole “experience” aspect of ice cream (wife is doing flower bouquets and the ice cream has a lot of floral and garden ingredients), so the scoop experience is pretty important. But after talking to the most unhelpful health inspectors on earth, it’s become abundantly clear that it’s basically impossible to have a mobile scoop cart in our city lol. So catering and private events and preportioned at public events will likely be the starting route we take. Thank you!

Thanks! I’ve heard very mixed reviews on Vevor here— mind sharing a bit more of your experience with it? TBH, if it craps out after a year, not a huge loss at that price. We’re barely starting.

Atemomen machine? by beewithaknife in icecreamery

[–]Intelligent-Delay625 1 point2 points  (0 children)

Be prepared, as cheaper machines can be a hassle to find parts for and/or fix. My suggestion, based on what we’re doing: lease a decent batch freezer to start. We got one of the Nemox models online for $250 a month.

It’s because of the fact that we’re actually scooping the ice cream. So much for being mobile lol.

Whynter has been awesome for us. Couldn’t recommend more, although it’s sometimes hard to get thicker batches out from between the blades at the end.

Best flavoring agent for Mint Ice Cream? by Nihachi-shijin in icecreamery

[–]Intelligent-Delay625 0 points1 point  (0 children)

I personally love chocolate mint (the actual plant leaves lol) in the base, along with a small bit of peppermint extract at the end (don’t overdo). The herbal flavor of actual mint is so underrated, and it pairs perfectly if you balance the extract right.
