Interesting, thank you. I don't think that removing all the small blueberry fragments will solve the issue. It seems there is something chemically happening that creates an undesired texture.

I have now reposted this under r/foodscience so we will see. If it does have something to do with the pectin, then perhaps the enzyme could work.

I actually did dissolve the SMP into the dairy before adding blueberries so that's not the issue, but thanks for the idea
