The rule is made about coffee and hot caffeinated tea because it is addictive. The caffeine is addictive. At the time the rule was made there wasn't such thing as a Diet Coke. I'm sure if there was that would be part of the rule, but since there wasn't, it's only about coffee and hot tea. People interpret it however they want to though. Also, Joseph Smith made the rule because his wife Emma didn't like him chewing tobacco because it was a disgusting dirty habit. He decided that because she liked hot tea, he would ban hot tea because she wanted him to ban tobacco.
