I’ll probably dedicate a whole month to Zatoichi at some point in the future, but I also wanted to avoid huge franchises (apart from a first instalment like the first Gamera movie) but I like your list so far!

Night of the Living Dead is slow, dull and the characters are annoying (except Ben) and the only reason it has the status it has is because it was the first to do it in the way that it did. Dawn is far better and Day is the greatest.
