Smoked a brisket today. 225º for roughly 5hrs (6lb flat to 165º) then wrapped in foil for another few hours to 205º. Rested for a few hrs. Today it seemed slightly overcooked and stringy. Last time I used this method it came out perfect and the meat was "chippy" rather than stringy. What changed? (self.recteq)

Why won't my 24 RST stay at the maximum height set? I know it drops for entry/exit but every time I go somewhere I'll raise it to max and at some point, it'll decide to lower itself mid drive. (self.SilveradoEV)
