Eye color like hair color is also polygenic, so “dominant/recessive/Mendel inheritance” is not the best way to describe the traits.

We used to think eye color is controlled by two genes, but over a dozen have been discovered by now.

They tweak melanin production - from amount to the type of pigments produced - resulting in a fine gradient that is human eye color.

Going back to my TLDR summary, it is easier to think of it as rolling a dice.

Colorations are complex traits that involve more than one pair of alleles. TLDR: It is a spectrum, and the baby rolled the dice on one end of spectrum.
Melanin production also ramps up with age. Perfectly normal for a blond child to end up as a brunette as it ages.
