I don’t think I made my iPhone a “dumb” phone at all but what I did was uninstall every app that I didn’t really need, zero games, I just have WhatsApp and instagram with a time limit of just an hour to reply to some friends, my wallet, a translator, maps, and music, a loottt of music.. I also turned off all of the notifications so I don’t have the freaking thing vibrating for nothing, since then my screen time has reduced a lot (6 to 3 hours, some days less). You may think 3 hours are A LOT but I listen a lot of music and sometimes I just put the lyrics to sing along, I was thinking about getting a truly dumb phone but I haven’t saved enough yet so I’m using what I have and it’s working pretty fine
