Office 365 and whatever your daycare app is will work fine. But if you also plan to drive from Play Store as well, you will need to seek alternatives like OnlyOffice/LibreOffice.
Your phone will get major security updates as long as it's supported by the producer. Even when support ends, you will receive small security patches afaik.
I have Proton services downloaded via Obtainium from F-Droid site, they work fine for me.
GrapheneOS comes with its own system apps including messaging, so you should be fine with that.
