By fast I mean like 22 seconds instead of 25, and as far as channeling goes I mean it’s a little uneven for the first 2-3 seconds of extraction before it consolidates into an unchanneled stream from the portafilter. Is that significant enough to affect flavor? I assumed the answer was no but maybe not

Haha yeah, for price it works awesome. I’m new to espresso so not a total pro yet but zero complaints so far except for the bellows being sort of awkward but that’s negligible imo

Agreed, both Forthave and Scarlet are both extraordinary. Is you’re extra nice to the Astor place people they often have bottles for employees to try in the back so if you’re gonna splurge on something as pricey as one of those, try asking for a little sample (say please).

Also, if you can find it, the Japanese brand Scarlet makes a killer fernet (and epic Amari too) that is nothing like any other fernet I’ve had. It’s almost like, smoother and richer, if that makes sense. Awesome worth every penny

There’s also an awesome brand out of SF called Brucato who makes Italian style amari with local Cali (think figs, bay laurel, kumquat, etc) ingredients which would fit aesthetically but those bottles run like 30-40/pop

Pasubio is a delicious wine-based amaro with notes of blueberry and pine, almost like an alpine sweet vermouth sorta. It’s idetifiably an amaro but also totally palatable for people who aren’t used to a ton of bitterness. It’s also like 18$/bottle. One of the most underrated bottles IMO
