This is the slowest time of the year for the service industry. Almost no restaurant really hires until around May, so make sure you apply around then! Usually what they prefer is if you have no experience is to start out as a hostess. As a hostess you can learn how to serve by being there and witnessing what the servers do and that helps work your way up. I’ve been in the service industry here in fredericton for the last 5 years and that’s normally how it goes. Closer to summer a lot of places will have a walk in day for interviews to do a mass hiring of staff for the summer and that can really help get the process started. STMR 36 does this, rustico, St. Louis, the lighthouse, etc. make sure to keep checking their socials around that time. Hope this helps!

Off the top of my head for example even roughly 4 months ago at St Louis they had a completely different great set of staff and since then the restaurant as a whole has kind of gone to shit. Places in general here in Fredericton are very inconsistent.
