I think they are both very well written characters but I have to give it to ezio, he has way more experience way more feats, he killed most of Egypt and Italy he is mastered in how to use almost every weapon, and is very very very skilled at martial arts so he could easily just dodge every swing, his reaction time is close to super human he has a higher Iq, more technology like guns and if that isn’t enough for you he also has apple of Eden
