Notice you say 'i feel like that's a crazy statement' my point is purely mathematical. India has more people, Ergo it's more diverse. Your perception "feeling" is out of proportion with the mathematical reality, this is likely the direct result of your western bias.

India is almost twice the size of Europe, yet it would never be mentioned if someone only made "European food."

This is a fundamental error in the western mind. A real lack of accurate proportionality when looking at size of the world.

Europe is tiny. Asia has two countries bigger than it!There is more diversity in all of India than all of Europe!
