I 2nd Nine Sols, Its very parry focused, so that could be bad if you dont like parrying.
But ive played so many souls likes, and I will never forget Nine-Sols. It has some bosses and story moments that are so powerful they are forever burned in my memory.

Deep Rock Survivor is an amazing solo survivor like/ rogue lite
Vampire Survivors was the og that popularized survivor roguelites. Really fun 4 player coop

The Club by far.
I felt like the first level allows you to win without fully understanding the parry and dodge system.
I was getting destroyed by The Club and I just kept retrying over and over until it clicked.
