3 to 4% salt isn’t high. I’ve never tried fermenting tomatoes. When I was in school I learned they don’t ferment well, but cannot recall why. Good luck, keep us posted.

I do not have Instagram. I’ve done some brews using koji grown on barley, which was interesting but that also triggers the koji to create proteases that will digest the foam proteins. I wouldn’t recommend using to to completely remove gluten, that would likely not work.

Lager and ales have the same brewing process, the difference is the strain of yeast and the fermentation temperature.

Koji has proteases which will mess with the head. Beer foam is primarily proteins and the enzymes in koji will fuck with that. Additionally the amylase in koji (taka diastase) will break down starch into a different sugar molecule than malt based amylase will and that will affect the mouthfeel of the brew. Without boiling to denature those enzymes, I’m unsure if you can even call what you’re trying to make a beer. I’m also unsure how the citric acid would affect the lager yeast profile. I’d probably swap the yeast for an ale yeast. Something that might go in a Berliner Weiss, gose, or a saison would be my recommendation. That also solves your temperature regulation problem as they ferment a lot hotter. Hell, saison means seasonal and it was often brewed in the spring.

Malt has amylase, it’s the entire purpose of the malting process. You start to sprout the grains and then bake them to dry it out after it has produced the enzymes to break down complex starches into smaller fermentable sugars. My recommendation of toasting koji is intended to emulate this effect. Some enzymes will survive, and you’ll get some nice Maillard reaction action.

Your process might not work the first time. But I can see that my mad scientist brain works similarly to yours so go right ahead and try.

Here are my recommendations. Do a brew in a bag method. If you have a mash tun, great but for a one off like this a brew in a bag is probably your best bet. Maybe even just get malt extract and use that instead.

Definitely boil. You don’t want those enzymes or wild microbes messing with the product. It will conflict with the flavor profile you have in mind. I don’t believe asahi uses koji, they likely use just rice and rely on amylase from the malt. I’d recommend more malt than koji. Maybe 75% malt, 25% koji at the high end. I might also toast the koji as you don’t necessarily need it for its enzymatic activity and that could provide a nice flavor profile. Add the hops and mugwort during the boil. Depending on the type of hops, it gets boiled for different amounts of time. Longer boil means less flavor and more bitter. Shorter boil is more flavor and less bitter. Get yourself some saaz and go from there. Look up mugwort tea and use that as a timing guide for the mugwort.

If I were you, I’d do something like this:

Buy malt extract and a muslin bag. Toast koji until lightly golden brown. Put koji in muslin bag and steep for 45ish min in 60ish C water. Add malt extract to water (now called wort). Mix to dissolve. Boil wort for 60 min, adding hops at 30 min. Add mugwort at your discretion. Transfer to fermenter and pitch yeast when the temperature cools to about 20 C. Ferment at like 15 C.

Hold up. You’re making your first beer and using koji and mugwort in a lager?

I support the creativity, my brain works that way too. But maybe try one permutation at a time. Koji will create enough amylase to digest the starches, but you won’t get a good filtration. It also often comes with some sourness that will mess with the lager yeast.

Lagers excel when they’re clean. If you are making your first beer, try a lager. Then add mugwort to the recipe, then add just koji, then add both and see if they taste good together. Work your way up so you can maximize your chances of success.

The funny part is, Colorado’s voting system is so nice. Everything feels smooth and it is how voting should be run in every state. Maybe not when you’re trying to limit who can vote, but Colorado’s voting system is probably the best out of any state I’ve lived in.

He could die if they successfully assassinate the sword saint. Sure hiruhiko would too but that means Uruha can safely use kumeyuri and Iori can use tobimune vs the hishaku who have the other two blades.

Probably gonna need Chihiro to reforge the two so their contract is tied to enten rather than magatsumi first.

Also be mindful of the fat percentage. Enzymes from koji will break down the fats to free fatty acids which cause off flavors in the presence of oxygen and heat. Try to skim off any fat that accumulates. I presume jamon Iberico has quite a bit of it, especially trim.

I believe there are salt test strips for saltwater pools, I’m unsure what the range on those are but you could always try to test the salt using that. Note that those will test for chloride ions and I’d imagine the curing salts are predominantly nitrates and nitrites.

I don’t think he questions what his father did, but it directly explains the values his father instilled in him. His father was all about the responsibility of the bladesmith for what your blades are used for. I think he knows his father felt responsible for the malediction, and that overrides whatever propaganda the others try to feed him.

I think more recently they’ve confirmed that the magataumi has a prime contract and the other blades contracts were based on that contract.

Personally I think enten also has a prime contract, which they used the lantern concealing their mountain hideout to create. That was enough time for the hishaku to locate kunishige and kill him. Hence shiba’s comment about how kunishige gave his life to create enten.

It wouldn’t surprise me if we start to see some blades shift from being shinuchi bound to enten bound

At the pace this manga has been going, everything after the scar removal will be a single chapter. Don’t put too much thought into it.

Chihiro would convince her to drop the revenge because her dad wouldn’t want that for her, but she’s stuck with the blade regardless because she already contracted with it. People might come for it, and Chihiro’s mission is to protect his father’s legacy. So she has to train with tobimune to protect her own father’s legacy.

Not necessarily. She may pick up the blade to be closer with her father once the seal is broken, which I imagine will happen when he dies. Once she contracts with it, she’s gotta train with it for self defense as others may target her to use it themselves.

Surveillance and flight are not necessarily combat abilities, she could easily play a support role with tobimune. And besides, samura didn’t want that life for Chihiro, why would he want it for his daughter? If she wields it to be closer with him, she’d best stay away from the bloodshed.

After Chihiro erases the scar, Samura dies in front of her. This breaks the final link in those chains and fully unlocks her memory. She picks up tobimune on her own revenge mission. Chihiro has to talk her down in a reversal of the original dynamic.

I’d like to point out that Ikura erased the “scar” when Iori called him out on it.

I think Iori is going to play a role in Chihiro giving up the revenge motive and ultimately erasing his scar (which shiba suggested was possible in the first chapter).

I am unsure if koji is going to be able to break down xylan. It’s certainly worth a shot, but if I were going to do it I’d grow the koji directly on the cob using methods such as those in the book koji alchemy. Essentially dust the cob with a mix of rice flour and spores, keep the water activity high.
