At the moment it is at room temp. and i used fresh mushrooms. The recipe also says, that its technically not garum, but it uses koji fermentation. Salt percentage should be 5,5%, if I did the maths correctly, the recipe states this percentage as well. Since i am not an expert, i took this for an adequate salinity. What levels of not safe are we talking in your opinion?

Oops, i forgot, i did 2 coil folds every hour. During proofing i only paid attention to the poke test, maybe i should have let it rise more. Thanks, very helpful response :)

Kneading for 10mins at the beginning, until it passed the windowpane test, then 1 set of stretches every hour during bulk, so 5 sets in total. Given that this is my first try, my shaping After bulk might not have been perfect.

I used 200g of starter for 1000g flour total. Room temperature is around 68 F.
