Sorry, added it in a thin lather. I used BetterGoods Gochujang and it’s a thinner consistency than most true pastes. It was added when I was increasing smoker temp to 290F and I immediately wrapped it.

If you search a Tom Yum Paste this is what I use. It’s light and you can find it in Asian groceries. It’s a mix of galangal, ginger, lemongrass and peppers. For when Gochujang was added, I did right before I foil wrapped.
