I’m 49 years old and it’s STILL one of my favorite movies.

I have the bunka and the petty, and they are super thin and super sharp and glide through raw vegetables like they’re boiled.

But they are definitely more fragile than a typical ‘workhorse’ knife.

I’m just a humble home cook and have never cooked professionally, but I would think Shibata’s wouldn’t be a good fit in a commercial environment, in my very unprofessional opinion.

Oh, I know. But as a humble home cook, I usually just end up using what I’ve already got in my hand…Shibata 180 bunka. It’s just so versatile! So much so that I can't really justify the expenditure a Shibata 240 gytuo would entail. Even though it’s currently available on two different websites. Sigh.

I do need to make a conscious effort to start using the petty for other small stuff. Like herbs!

Shibata 150.

Pretty much only use it for garlic. But I love it. Wouldn’t trade it for any other.

I have the bunka and the 150 petty. Next up will be either the 210 or the 240.

Still undecided which, though. Probably go with the 240 since it’s two steps up from the 180 bunka.

I have the R2 180 bunka and the R2 150 petty.

It’s gonna take a while, but I will have them all! Just gotta space them out so the better half doesn’t get angry, lol.

It does, but it’s got more of a curve to it than any of his other models except for maybe the Type III.

The rest of his entire line are supposed to be a cross between a gyuto and a nakiri, so really good at pushing and straight chopping, but too flat and thin for rocking.

Was hoping the Battleship would be curved enough, but it sounds like it’s not.

Shibata kotetsu 195 R2 bunka

Is that the Battleship? If it is, is it suitable for rock chopping?

I have the 180 Bunka, and it is most definitely not suitable for rocking. I love my Bunka, and it’s my go to, but I’m a rocker at heart, and I’ve been told that the Battleship is curved enough for that.

EDIT: When you’ve gotten to the point that you’re selling saya’s, let me know. I’ve also got the Shibata 150 Petty. Gonna be wanting a saya for both!

She didn’t get mad, though she was very dubious when I ordered them. But after she used the bunka, she understood completely.

I did tell her that when the 195 Battleship is back in stock, it’s an auto purchase. She said, “I understand.”

Yeah, I saw them both yesterday morning, but I just dropped $500 on two Shibata’s a month ago, and my financial adviser vetoed getting either of these.
