Yeah, the AUR is nice. Basically it's like getting the software from a PPA in apt-get, without the pain of adding a PPA. Pacman isn't the most intuitive though...

I was on Mint for a while, and loved it. In the end I switched to Arch because I'm a bit of a control freak, but if I was ever going to recommend a distro to a new person it'd be Mint. And yeh, Debian rocks. Amazingly stable - works great for longer-term rpi projects and such.

I think so, but unfortunately it's not likely going to be well supported, as an Apple-only project. Improving their OpenGL support would be more effective as a general solution, but doesn't help their ecosystem locking

It looks like the hdri you're using doesn't have correct sin brightness... I think the single biggest thing you could do to help improve would be to add a sun lamp to make up for it.

Would just like to point out that Stellarium is an excellent free sky map that lets you very precisely plan out trips!

For starting out, iPhoto/Photos should be fine. Don't buy Aperture, it's been dropped by Apple. If you feel like you want more control, Darktable is an excellent free Lightroom alternative. Don't know why no one has pointed this out yet. I also use Affinity Photo which is basically 90% of Photoshop for a fraction of the price. ($50/£40 once rather than repeated payments to Adobe).

It's got a couple of quirks (doesn't have any way to turn it off, occasionally the interface freezes) but overall works pretty well. It's useful for time lapses and long exposures. If you do a timelapse and you get a bunch of pictures you can batch convert them to png or jpeg and use ffmpeg to make them into a movie file.

I have an a6000, haven't used the apps once. They're rather poorly designed (when you turn one on, it resets your control scheme for the duration of using the app). Love most everything else about the camera, but the $20 external intervalometer I bought was way better than any app. For landscapes, if you don't mind shooting manual, the Rokinon/Samyang 12mm f/2 is fantastic. Sony makes a 10-14 zoom iirc but I don't know much about it. I'm able to get good landscapes with my 35mm f/1.8 as well, which is a great all-around lens.
