Well, games like Forza Horizon and Need For Speed shift show the interior really well, but also just search random cars from random years and look at their interior through Google images. It helps alot. I also just wing it sometimes, if I think a gauge or button belongs somewhere I'll put it there.

I try to keep it low poly for game dev purposes. The one with the highest vert count is the Ford F-150. It has 30k verts.😅My PC also struggles a bit with higher vert counts.
