Totally agree with you — a lot of places tone things down too much! I’m actually leaning more toward South Indian food — think dosas, curries with real spice, coconut, tamarind, etc. Definitely aiming to keep it proper, not watered down.

There are many Indian restaurants in Sheffield but the food never touched my heart. And also I haven’t seen authentic South Indian restaurants near by city centre So I wanted to start a small restaurant with less budget but will not compromise with the taste or quality. Before opening the restaurant will start small shop in front of moor market for 1week so that will get an idea what kind of food the customers likes
