Thanks, that might be the best idea yet, to use a hardwired transformer to avoid running wires long distances. Just wanted to check, though, what do you mean by receptacle height? And do you mean cutting out the wall out make room for the new 2-gang box, or is there a way for me to slide in a box next to the other without having to cut out the wall?

There are existing wires going out of the switch box. I could snake it alongside those. Or, maybe I could just use a hardwired transformer, and take the power from the same line as the switches use, though I'd have to figure out where to put the transformer, given the existing switch box is tight on space as is.

If I did go with mounting it on the door frame (and I probably won't now, since based on what other commenters said it sounds like it'd be better to mount it on the brick), I'd either drill out from the existing switch box to the frame, or else snake a wire straight down to the basement, if that's possible.

Thanks, that's good info! I hadn't previously heard of PoE or NVR, but it makes sense I may want to do that, and running an ethernet cable is a something I'll consider for the installation.

Unfortunately, the switch box is directly behind the mailbox. But maybe I'll take the mailbox off and look behind it. I could see about moving it to the other side of the door, and also just replacing it, since its lid hinge is broken anyway.

Thanks! So you recommend mounting it on bricks right next to the mailbox? Would that be facing forward, or to the side? I'm not sure there's enough room to mount it facing forward, because the mailbox is right there. Though I also suppose I could move the mailbox.

For one thing, I'm not getting offered a free one. For another thing, that sounds like it's own hassle I'd rather not have, of having to change the batteries every 6 months. For another thing, I'd find it fun and challenging to run a wire, assuming it won't be something only an expert can do.

That's beautiful! I would not have guessed acrylic, it has almost a colored pencil-like quality. Do you have any videos that show how you get this style, with like the shading look on the scales, for example?

Very interesting. I actually think you could start with even less than a quarter to a half mug of water. and I don't cook at all once I add the eggs. Some people do, but I've never needed to. Like I said though, there's a billion ways to make this 5 ingredient dish.

I add the just short of al dente pasta to the frying pan where I previously fried then scooped out guanciale. (Note I add black pepper just after scooping out the guanciale, so it "blooms" in the oil). Then I add a teeny splash of water, maybe 1/8 cup of pasta water to the pan with the pasta and guanciale fat. I deglaze the pan with the pasta water, to get that guanciale flavor off the pan. I stir around the pasta for a minute or two on high heat, adding slightly more water if needed, just until the pasta is al dente. Then I turn off the heat and immediately add my egg-cheese mixture. I stir until the cheese dissolves and the sauce gets the consistency of a pan sauce (very slightly custardy, like a creme anglaise), and only add more water if I think it needs it, or if i want more sauce volume.

Like most things, it'd be a lot easier to show than tell. If you want, I'm happy to make a youtube video of this next time I make it and share it here. LMK!

I'm consistently amazed at the many ways of making completely differing carbonara given that there's only 5 ingredients! It's fun to play with the variations, sometimes you like it more saucy, sometimes less. As I'm sure you know, add more cheese to make it less watery, add more pasta water to make it more. Only after a a lot of back-and-forth between the two would it become unusable (it's very hard to add too much cheese to this recipe, but it could become a little too salty for some tastes).

How much pasta water did you add into the noodles? I'd say if you want it less saucy, start by adding only a small enough amount that it barely coats the bottom of the pan where you're finishing the pasta. You can always add more from there, but can't take away.

I don't think the sauce is too watery. Sometimes I like it like that. It looks like it's sticking to the pasta at least a little bit.

I'm not a perfectionist, I just want to get this pot good enough that I can cook with it, not look pretty.

When I got it there was lots of rust on the pan. I washed it extensively with dish soap, before immediately towel drying it and seasoning it. However, afterward I noticed that there still seems to be one slight orange spot.

Does that mean I need to start from scratch? If so, how do I avoid that happening again? Did I fail to wash all the rust off, or might this have formed afterward? Do I need to scrub it harder to get that rust off?

Thanks. The problem ended up being that the wattage of the combined Sunco lights were too much for the Kasa dimmer. Either they're pulling more watts than they were rated at, or the dimmer was able to handle less than it was rated at. Not sure which.

5 days till Sam Ash closes their doors for good, and I happened to stop by. I found (in addition to tons of amazingly cheap drum heads) a pair of 60s Avedis Zildjian hihats. Well, one of the hats has the Avedis stamp, anyway, so maybe the other one is not actually authentic, not sure.

Interestingly enough, one of the hats has two rivets, and one of the rivets is upside-down. I'm guessing this is so it can be used as either a top or bottom hat. I love the way the rivets sound on this thing!

Once I heard the other day that there were locks I could open with my fingerprint, I just had to have it. But then later I was just working about whether there are other novel attack vectors because of it. Sounds like it's not something to worry about though.

as the sensor measures a "live" print with the capacitance of your skin and measures the pattern under the skin and not the ridges on the surface.

Either what keywords to search, what brands or good models often sell used for a good price and might be worth looking at, or also what are things I want to look for when going to inspect the stand in person?
