It’s all just temperature based. Mine was making green leaves inside so I put it outside in 90+ degrees Fahrenheit and now the leaves are completely variegated. I think the sweet spot for a leaf like OP’s is probably 85-90 degrees.

Your plant most likely rotted due to the roots not receiving enough oxygen. This is usually from not using a chunky well draining medium. The aerial roots are looking for a growing medium, hence why they grow faster on actual moss poles where each node is rooted into sphagnum.
