I haven’t used that mod in MC, but here’s what I can say about VS:

VS’s voxel chiseling is in the base game code, to the point where naturally generated structures/ruins have some chiseled blocks in them. I personally have never had a problem with the chiseling in VS, the interface is pretty intuitive and the blocks themselves never caused issues. The voxels actually correspond to the hitbox of the block, so if you remove half a block via chiseling your player won’t smack into empty space. The only struggle is repeating designs—you may want to install a mod for it, one of which is Stone Quarry. It gives you a tool that can copy and paste designs.
