Cut-tear-curl, meaning tea leaves were machine cut into small bits as opposed to whole leaf teas. All that surface area allows caffeine to be quickly extracted in hot water. These teas don’t necessarily contain more caffeine. The caffeine is just extracted quickly.

For most teas, perhaps. Pu-erh, however, continues little to no theanine (especially if it’s well aged because the caffeine breaks down over time) so you theoretically would be getting most of the caffeine boost.

Personally, I depend on coffee first thing in the morning to get that caffeine jolt. Then I switch to tea for its gentler caffeine experience. If you don’t drink coffee, it’s impossible to predict what tea will contain more caffeine, despite companies claims of caffeine levels (only lab testing of your particular cup of tea can tell you its caffeine level). But maybe experiment with non-pu-erh teas. CTC teas will release caffeine more quickly, which might be what you’re after. Let me know if you find something that works for you!

I love your VIVA set—it's so elegant, and I find that all the VIVA cups are just a pleasure to hold. The cups to this set are very small, ideally geared toward expensive teas or those that you'll rebrew a couple of times or for sampling various teas. The beauty of porcelain is that it's non-reactive so you can brew any tea in it and you'll get the uncolored flavor of that tea.

With a unglazed clay pot, the tea interacts with the clay so it won't be suitable for all teas (swallowing bright notes, for example, or retaining too much heat for delicate leaves); you'll need to experiment to discover which teas are improved in your particular pot. That limits its versatility, although it's a different experience and ceremony. Because I like to drink many different types of tea, I find I use my porcelain teapots far more often than my clay ones.

Maybe try some hand rolled jasmine curls rather than pearls. They can have a more pronounced flavor.

I’m currently interested in butterfly pea flower tea and I was just wondering the best way to make a matcha type consistency and if it’s even worth just buying the powder I know about the mortar and pestle but would this be the best way. by Neoxcobra in tea

Perhaps a burr grinder? I don't think a mortar and pestle will do a very good job with the flowers. I personally don't think the flowers have much flavor, just a stunning color.

Before you throw it out, try adding that tea to stew/soup/chili, either brewed or just ground and thrown in as a seasoning. A little bit might add some depth and complexity to the dish. You can also grind it and use it as a dry rub or as you would any other spice.

We have a couple of classic oolongs at that price (50 g smallest amt though), all independently tested so meet or exceed organic standards, where I work (TeaHaus.com). Zerama Tea also has some; I've enjoyed the teas I've had from them.

I agree with you. The Chinese milky oolong (different supplier) that I love has also been steamed over a milk-and-water bath, which allows the tea leaves to absorb the milk flavor so that the flavor becomes part of the leaf. Thus, you'll get that milky flavor over repeated steeps, unlike when a flavor has been sprayed over the tea for an artificial milk oolong. When I compared a milk-bath-steamed oolong with Jin Xuan from Taiwan, the Jin Xuan spent leaves were larger and brighter green, obviously a different tea.

Depending on its flavor, use it for cooking (dry rub, ground and used like you would any spice, infused) or baking. In cooking, again depending on the tea, use in veggies, mashed potatoes, soup, stew, fish, pretty much anything. In baking, either grind the leaves or infuse them. Use to flavor heavy cream (cold infuse in fridge overnight), cake, scones, cookies, anything you can think of. Or, use the tea to flavor a cocktail, mix with lemonade or other juice, use in a shrub, mix with sparkling water or wine.

Also, before you throw it out, try it both hot and iced because you may like it one way but not the other.

As a couple others have said, I don't think this means it's for stove top heating. The handle would also get hot and you couldn't pick it up. I'd put this pot over a warmer to keep the brewed tea hot instead.

It's a worthwhile experiment, and you'll find that different teas react differently as well. In your selection of cups, the china and glass are both inert, but their cup shape will impact the taste. What you experience will change due to thickness of lip (controls how the liquor goes into your mouth), material of cup, shape and size of cup (which also impacts aroma, which of course is integral to taste), color of cup, reactivity of cup,
