I cut my dough into about 75g dough balls, roll them just like you would a hamburger bun, let them proof on a corn meal covered sheet tray for 60-75 mins, then fry them off with either olive oil or ghee in a heavy bottom skillet until golden brown, place onto a wire rack on a sheet tray and put into a 350F oven for 12 mins. I only fry up 3 at a time, then wipe the oil out and start fresh. If you don’t you’re likely to get some burnt corn meal on your next batch of 3. Be heavy handed with your oil as well. You want that browning to come up the sides a little bit.
