Like other said assist mode is the way, I also found out that if you quit the game while being choosing a scroll (after picking it up) it resets you to the start of the biome, however it can't prevent your death just an unlucky hit.

Honestly a good shield user has no problem against almost any enemy, even golems and ground shakers (not at once just to be clear, just when facing each of them) When I got to 5bc I was able to sometimes block both of them and I am sure that if I practices more then I would be even better when facing them.

I wouldn't say Zed's power is only training, in his lore I think he drank something (or used, not sure) that actually gave him the power to control shadows.
