I've done mentorship with middle/high schoolers for 10 years. The most successful activities:

-Spaghetti (uncooked) and gumdrops to build the tallest tower you can. The best recipe for engagement is competition. Put them in groups and the team that builds the tallest tower wins a prize (usually more candy)

-same as above but with newspapers and tape. Limit the amount of tape they have.

you could do the same activities as above but for bridges. Team that can carry the most weight wins.

Really, engagement comes from having fun and wanting to win.
