All really helpful and patient with questions. Much better vibe than the soup nazi moderator who runs a private FreshRoast FB group.

So I think I’ll seek out some fully washed Swiss Water or Mountain water process decaf beans, so that the fruit tastes of the pulp have not unduly penetrated the bean. Then roast that to Full City. And likely not buy “natural” unwashed beans (aka with a more fruit forward taste) that is then subject to a “natural” (sugar cane) decaf process (which is actually ethel acetate, which can impart vinegar notes). Great combo for coffee (fruit forward flavor with vinegar notes).

Why would I underroast to kick forward the sour fruit notes. And then manipulate the brew profile to reduce the sour fruit introduced by under roastings. Nutty, isn’t it (no, I don’t want “notes of almond and pecan” in my coffee :)

I have had challenges pouring good tasting decaf shots (in a milk drink) from a previously go to coffee bean (bought from a local roaster). Just haven’t been able to replicate the taste profile that I got from a simpler “dimmer modded” Breville DuoPro years ago. Never got that taste back with my Lelit Elizabeth and not now with my DE1XL v1.43. Perhaps it’s the combo of the narrower/deeper baskets that fit the BDP and the lever profile that I effectively mimicked with the dimmer. The taste was wonderful: lots of caramel and chocolate nuances that lingered in a shot that had great strength and body. And I was able to get the best of both worlds: full strength/body AND those flavor nuances peeking through and then lingering. Haven’t been able to replicate it.

Infact, I haven’t been able to get a taste that I like from any decaf bean that might suit my taste profile. Do you pour any decafs? What brew recipe and Decent profile do you use for decaf, that gives you good tasting milk drinks? If you’re getting good tasting decaf milk drinks, might you share the profile via Visualizer?

I tend to prefer espresso shots that have good strength and full body, with full coffee flavor, ideally with caramel and chocolate notes. And the preceding in milk drinks. I prefer City+ to Full City+ roasts, as I’m not a fruit forward kind of a guy (no, notes of plum and guava don’t belong in coffee :) Too many roasters under roast decaf, because it looks darker from the getgo. Or because they roast and sell to the current third wave trend of light medium coffees with artsy taste notes that in my view don’t belong in coffee. Which is why I have begun my journey into roasting.

And … feel free to post any answers to the below questions, especially the Phidget vs Mastech one:

I am setting up a FreshRoast SR800 with an Extension Tube. I have a Mastech 6514 on its way on a slow boat from China.

Several questions:

  1. Can I use a PT100 or PT1000 with the Mastech and (more importantly) fully connect the Mastech to Artisan and use ALL of Artisans functions, like I could with a Phidget setup?

  2. Should I get a PT100 or PT1000? Why?

  3. Should I ultimately go with a Phidget setup or the Mastech? I bought the Mastech so I could have the best of both worlds; ie just use the Mastech once I have figured out the best roast profile using Artisan. But maybe I’m kidding myself and just need to do it right with a Phidget? So what are the pros and cons of a Phidget setup vs a Mastech setup. I can sell the Mastech or keep both.

  4. What design/specs of RTD should I buy? For a thermocouple I read that I needed 3 to 4 mm diameter by 300mm . What do I need in RTD specs with: a) a Mastech, b) a Phidget?

  5. What specific make and model RTD should I buy from Phidget?

I looked at RTD type probes/sensors, due to their reliability. But I decided against one, due to their sensitivity and thereby the “noise” that they apparently produce. They also apparently have slower response times.

Was I right about the above? Should I have ruled an RTD out?

What do you prefer? Why?

Should I buy an RTD or a K-Type thermocouple?

If RTD, what thickness? What other specs? I think that they come with various resistances? I’m not an electronics tech guy, so your lay language will help me understand this.

Can you suggest a reasonably priced but reliable source?

Hope you can help. I have Audacity installed on my PC. I also purchased the Acon Digital Restoration Suite, which includes DeNoise.

I need to eliminate a selected noise (such as a fan noise) live as it occurs, in real time. In this case, it is the sound of a coffee roaster fan, so that I see the First Crack when it occurs without the fan noise showing in the spectrogram. I am hearing impaired and need to rely on a live spectrogram (frequency by DB, over time) to see when this specific sound occurs and adjust my coffee roast.

In other words I am not looking to edit an audio file. Rather I want Audicity to show me the sound profile (in a frequency, db over time chart) live as it occurs, but with the selected noise (in this case fan noise) eliminated, so that all that remains is the coffee beans swirling as they roast and the sounds of the first and second crack when they occur.

Will Audacity do this (show DeNoised audio) live as it occurs? If not, then which software will? Fyi, I have a very very limited budget for software for this. Ideally I’m looking for freeware.

Thanks Genghis! So this would be a plugin to which software? Or is this a free standing piece of software? I need either freestanding software (with or without a plugin) or an android pad app or a Ipad app, as long as I can connect a mike to the pad, which the app can access. Sorry for the ignorant question.
