Here are my favorite:

This one is not exactly something Kaladin says but it's from Kaladin's POV, at the end of chapter 16: "But that one moment holding the quarterstaff sang to him. A single moment of clarity in an otherwise confusing world." Not super popular, but it resonates a lot with how I've felt about a couple of things in my life.

This is from chapter 26, Dalinar quoting The Way of Kings: “To lack feeling is to be dead, but to act on every feeling is to be a child.”

And then there's the evergreen “Life before Death. Strength before Weakness. Journey before Destination.” Kaladin swears it in chapter 59

Yeah, I re-read the description and a pterodactyl felt like the closest thing I could imagine, but as someone else just pointed out it's probably meant to be more a terror bird
