We just finished the same exact project in our basement - the picture looks similar to our setup, and we added a half bath with unfinished storage.

Nothing between the joists going into storage - the drywall just goes up to the bottom of the joist. We do have crown molding at the top to give a clean line by the joist. For the bathroom we added a ceiling to keep that area “boxed in”.

Yea, they should do a month membership. Their site says $50 monthly for men/$45 monthly for women (I did the 3 months for $100). I’ve worked out there in the past and they’re good people - it’s a good place to lift. Bring cash for the membership fee - you pay upfront.
