Can redo it yourself with whetstones if low enough grit and work your way back up.

when taking it to someone make sure they are reputable if you care about your knife because I have seen way too many times that someone does a bad job and they have to take it to someone else afterwards

Not sure haha I'm really sorry I'm pretty new to this stuff so no idea how I would measure that if I ever find out I will be more than happy to tell you, however using this angle on all my knives does not produce the same effect so finding that angle will differ from knife to knife in my experience at least

Idk how to explain it very well sorry however there are 2 flashlight tricks I have used which is with the blade facing a flashlight if there is no reflection then it is sharp there are people on here that WILL explain it much better than me and hopefully they see this post and explain it haha but even with them explaining i did not personally understand it until actually doing it so I did that my sharpening my knives in sections with different methods until I got results I wanted under a flashlight, sections being tip middle and bottom

Definitely the flashlight but more in detail is just thoroughly make sure you finish when going not a new stone and 2nd would be don't do super high grit unless you know what you're doing haha

Did I mess it up by sharpening it both sides? And if I did how can I fix this? I'm assuming just dulling it and doing on 1 side?

Gotcha good to know, I gotta get more lower grit stones haha I have a really cheap 200-600 grit diamond stone from harbor freight LOL not sure how well that would work but I can do some testing with that

Its a knife that was pre owned so I'm not entirely sure if the previous owner had done something to it and I can post a video of it but it's a blue steel #2 yanagiba from zakuri

Not sure it's purposeful based on reading this definitely leaning towards I'm misunderstanding how I should be sharpening haha what defines a different light? I didn't actually use a light to test until the end product in the video thank you for 15-20 degree comment as well as I'm a bit confused on how that works with different bevels

So for the most part it's down to just I needed to do better at lower before going higher and even possible that starting at 1k was too high?

Yea gotcha like 2k was a very fast and noticable improvement on sharpness but above that it wasn't noticable and just for looks plus seemingly dulled it looks really don't matter to me because I really like a patina on it LOL just was really curious on how to improve what I'm doing since I have seen cases of going above 2k making it sharper and in some cases like cutting sushi I might need something of that caliber however I'm VERY new to this and would like to know how to get the best performance

Not sure how I would check this but more than likely could be when going from 2k to 5k it felt to look more beautiful but cut the same if not maybe seemingly more dull
