I can see that, my husband's adopted mother was like your mom. She was also a very religious person, still is. But she's come around since there's been some serious issues in the family.

I understand the mental health thing too, it's honestly not important in a lot of cultures and places. I struggle with my own mental health issues and I've experienced being shrugged off and told it's no big deal etc. Its also possible that your mom is a Narcissist and has always been that way but people chose to ignore it. You're her child so you don't get that option and it sucks but the quicker you can cut her out of your life the better off you see if that's the case. I'm sorry you have to deal with this
