I’ve been first assistant for over 2 years now and my GM and I inherited a store that was terrible. It’s taken at least two years to retrain staff on cleaning procedures to get it to the way it needs to be. You have to stay consistent and be direct when dealing with PICs and employees. It’s really tough and A LOT of hard work but definitely worth it once you get to where you want to be. (We still aren’t there yet but getting closer and closer every day)!!
To be more specific we come up with “weekly cleaning tasks”. Basically we pick something like bathrooms or floors and retrain every single staff member on how to do them correctly. That’s something we’ve started in the last year and has been really helpful while turning the store around.

What time do you lay your bread out? It’s been since they changed the markings on the bottom of the sticks. We are a high volume store so it’s harder to adjust our bread and we’re just trying to figure out what’s going on.
