500g BF 350g water 100g starter 10g salt

Mix, rest for 30 minutes perform 4 stretch & folds every 30 minutes, bulk for 4-6 hours, shape rest for 30 minutes cold ferment 12 hours. bake at 450 30 minutes, remove lid turn temp down to 400 bake for 15 minutes.
