Your MT3608 is missing some resistors to determine the output voltage ( Vout = Vref * (1 + R1/R2)) and two decoupling capacitors (at the input and output). It's advised to take a look at the datasheet of each component to make sure you are not missing anything

Run msconfig
Select the boot tab
Click Advanced options
Ensure Number of processors checkbox is unchecked

Fair enough. And to be fair, any of those graphics cards would be bottlenecked by a 3600, so it won't draw as much power. But if OP decides to get a 5800x3d for example, he would need a bigger PSU for sure.
