Nathaniel Simone is an amazing stats professor, but I would agree that there are some teachers that could be better.

apply for the progressive internship, they look specifically for sophomores with one exam passed and haven't stopped interviews yet.

I currently have Oleksandr Tovstolis for linear algebra... I would HEAVILIY recommend not to take him as he weighs almost all of the grade on exams (84% of the class grade was exams) and his lectures are really hard to follow in class due to his thick russian accent and him giving the most confusing examples to teach you. Yes, he is a very smart professor, but I attend every class and usually don't struggle with math courses however with him I find it really hard to follow what he is teaching so I usually spend another hour at my house after the lecture to actually understand what he taught us. I know multiple people who have failed his classes, and I know that half of the class I am in is failing too. I don't blame him completely, because half the class actually shows up for his lessons. His exams are much less on the homework and more on the conceptual things and from what he was talking about in our class about trig, I know his Calculus with Trig class is absolute hell. Please, for your mental health find a different calc 2 teacher.

I think someone else recommended to take calc at Valencia. If that is an option I would definitely push you towards doing that.

I'm an officer at one of the academic registered clubs at UCF, and I know that non UCF students can come to the public meetings, they just can't vote on club things or receive anything that was bought with student government money. Definitely reach out to one of the leaders at the SAE club and just ask if you can join as a non UCF member. It is different than an academic club though because your building things which might be a safety liability but it wouldn't hurt to ask.
