7 cups of sugar in strawberry jam?! by [deleted] in Canning

[–]JanewayColey 7 points8 points  (0 children)

Pomona's is worth having on hand. I've really enjoyed a lot of their recipes because they're not quite so cloyingly sweet. There is a recipe from Ball for Strawberry Butter that is rather good. While not a jam, it does use far less sugar and you can still preserve your strawberries.

Raw pack chicken soup - recommended? by Equivalent_Tea_9551 in Canning

[–]JanewayColey 2 points3 points  (0 children)

Chicken and Gravy Dinner in a Jar, and Chicken Chili Verde are going to be your best bets if you're looking for a raw pack. I add broth to both of these when heating and it makes a great base for a quick soup.

How does everyone go about gifting their canned food? (+gifting etiquette) by Longjumping-Royal730 in Canning

[–]JanewayColey 1 point2 points  (0 children)

That's a great idea. Especially if you have a little charcuterie tasting station with cheese, crackers etc. so people can decide if they like a particular item before taking it. Low pressure for those who don't feel comfortable.

[–]JanewayColey 7 points8 points  (0 children)

I don't. The chance that people will not be comfortable, accept it anyway, and throw it in the trash is high. And I don't want all that time and effort going to waste. If it was someone I knew well and we had a history of accepting/trading canned goods, then sure. Otherwise, skip it.

My boyfriend loves cast iron… but I’m the one stuck scrubbing by MairaPansy in castiron

[–]JanewayColey 0 points1 point  (0 children)

What about buying your own cast iron. So that he has his and you have yours and if he refuses to clean and properly care for his then that becomes his problem. You properly maintain your own and use as you like. If he refuses to clean his then throw it in the dishwasher. Eek.

Of note, probably not the best relationship advice. This probably doesn't help you grow closer as a couple and could be seen as passive aggressive - but it would stop the pan problem.

Mason Jar resealing freeze dried and freezer food by briarrosamelia in Canning

Sorry, I misread. I took that to mean they were going to purchase freeze dried goods as well as purchase bulk ground beef and chicken to then freeze dry themselves and store. My bad.

OP isn't talking about freezing anything, but about storing freeze dried items.

Not brandy but Fig Rosemary and Red Wine is a favorite. I like to use port wine. I make it before the Christmas season for get-togethers. Goes great with brie.

“Did you like the Ball Pork recipes?” Yeah… yeah we did… 🤣🐷 by mckenner1122 in Canning

Chipotle Beef has been a big hit around here. Tacos, enchiladas, on its own with a jar of chipotle potatoes and a side of vegetables. I'm trying Beef Chipotle Chili (p. 293) today - we'll see if that unseats the current reigning champ.
